Herb roast chicken

Add beneficial anti-inflammatory, anti-viral, antimicrobial and antioxidant rich herbs to enhance a traditional roast chicken.  Serve with a tray of roast vegetables or dressed mixed side salad.



1 whole organic or free range chicken

8 tbsp of finely chopped mixed fresh herbs (sage, rosemary, basil, thyme)

2 cloves garlic crushed 

1 tbsp chilli flakes

1 ½ tbsp olive oil 

Sea salt and ground pepper

1 lemon cut into quarters



Preheat the oven to 200 degrees C.  Place the chicken in the middle of the roasting pan.  Cut the juiced lemon into quarters and place inside the chicken cavity.  In a small bowl, add herbs, garlic, chilli flakes, olive oil and lemon juice, Mix and season.  Rub over the chicken.  Roast for 1 and 1/2 hours rotating the tray so the chicken brown’s evenly.  Remove from the oven , and serve chicken with roast vegetables or a side salad.
