Turmeric omelette

Perfect for quick breakfast, lunch or even small dinner, turmeric provides anti-inflammatory effects, while eggs providing proteins, essential fatty acids and antioxidant rich vegetables full of fibre, folate and nutrients.

2 eggs 

1 tsp coconut oil or 1 tsp grass fed butter (Kerrygold)

½ tsp ground turmeric 

Chopped finely spring onion x 1 

Chopped finely red pepper x 1/2

In a mixing bowl add all ingredients except coconut oil/butter and beat eggs.  Melt the coconut oil./butter in a frying pan over medium heat.  Pour mixture into pan and allow to cook.  Once the edges begin to brown, flip the omelette and cook on the other side.  Serve with chopped fresh spinach and ¼ avocado.
